Nicole's Blog
I first called my blog "things I care about", meaning to write about socio-political issues that matter to me. However, I quickly realized that you would all be falling asleep behind your screens. So I'll simply let this blog be about all the things that come to my mind and that I feel like sharing. Having said that, I cannot promise that I will never bore or annoy you with my political opinions ;-)

Last Day Off Work
My last day off work couldn't have been any better. I slept late, had pancakes and fruit salad for breakfast, then went to the zoo. We weren't the only ones who had the idea of going to the zoo on a Sunday... Lots of annoying, loud kids and parents who were too patient and used to the noise level of their offspring. But I'd kind of expected that, so never mind. The gorillas, orangutans, tiger and baby lions definitely made our day! There are currently four cute and playful baby lions at the Zurich zoo and they are definitely worth seeing. Mojito and Mejillones a la Marinera rounded off the day once we got back home... Now I'm just about ready to go to bed and curious what will be expecting be tomorrow. Will post more soon!

Sunday Morning Lovers' Brunch
I'm going to post another recipe, for Sunday is approaching quickly. On the calmest and coziest day of the week, why not sleep late and enjoy every moment of the day? The best possible start to such a day: pancakes with fruit salad and yoghurt. Mmmmmmmh!

Light Pancakes (serves two)
50g flour, 10 g sugar, 1 tsp baking powder, 1 tsp oil, 1 egg, 1/2 pinch of salt, 50 ml milk
mix everything and bake pancakes, serve with maple syrup (what else).
Fruit salad (serves two)
1 banana, 1 kiwi, 1 pomegrenate, 4 dates, 1 apple, a good squeeze of lime juice
serve with plain yoghurt
ENJOY!

Moving on to new pastures
Hey guys. Good news: I have passed the bar! I am sorry to be breaking the news so late (it's been a month exactly today), but I've been busy as a bee these last few weeks. Job applications, job interviews and shopping for suits... But I think I'm ready now. I'm a little bit tired, a little bit nervous, but going strong and looking forward to facing new challenges from Monday on. The first few weeks will certainly be tough, but hey - bring it on! I am so happy that I can finally start afresh and that I no longer have to make do with a temporary solution.

A Seasonal Recipe - Mejillones a la Marinera
Hello and welcome to my newly set-up blog, visitor!
I thought I might as well welcome you with a seasonal recipe (it's moules time :) that's one of my favourites and really easy to do. It's a discovery that Mr. Beautiful and I made ages ago in Madrid. We loved it and still regularly indulge in it. The recipe is for two - enjoy!
1 kg mussels, 1 onion, 4 tomatoes, 1 chilli, 1 clove of garlic, 1 glass of white wine, flour, parsley, olive oil, salt and pepper
- wash and scrub the mussels under cold running water
- sauté the finely chopped onion in a bit of olive oil, before it takes on color, add the peeled and diced tomatoes as well as the finely chopped chilli. Leave to simmer for a few minutes.
- add a teaspoon of flour and stir well, then add the mussels
- season with salt and pepper
- in a mortar, ground the garlic and the parsley, dilute it with the wine. Add to the mussels
- cover the pan and let the mussels simmer until they open up
- serve hot, in the same pan and with white bread such as baguette
